Since Barnes was a home brewer and a sommelier, distilling was a natural extension of his passions. He wanted to create a unique line of products, which now includes Treaty Oak Rum, Waterloo Gin, Graham’s Texas Tea, Starlite Vodka, Treaty Oak Barrel Reserve Rum, Waterloo Antique Gin, and Red-Handed Bourbon.
There is no “typical day" for Barnes and the rest of the Treaty Oak team. “We all wear many hats here at Treaty Oak. One hour you might be pumping molasses, and the next you are talking to a bartender about a cocktail recipe. It is never the same day twice,” says Barnes. A native Texan, Barnes has always been committed to and has a passion for making quality, local products. Treaty Oak tries to source as many ingredients from Texas as possible: the molasses for Treaty Oak Rum comes from the Rio Grand Valley and most of the botanicals for the Waterloo Gin come from Texas, as well.
The philosophy of keeping things local is what drew Barnes to Jack Allen’s Kitchen. Barnes met Jack Gilmore while Gilmore was building the first Jack Allen’s Kitchen and realized they both shared the passion for quality and locally sourced ingredients. Barnes says, “I love what they do at JAK.” For both, it is important to not just be a local company, but to also use local ingredients.
Barnes and the Treaty Oak team are currently constructing a new distillery in Dripping Springs that will open this summer. Tasting room, food, tours, cocktails, and retail sales will also be available. Their line of spirits is always expanding, too, with plans for more whiskeys as well as a line of cordials and liqueurs.

Treaty Oak Platinum Rum
Fresh squeezed lime juice
Organic Agave Nectar
Fresh Jalapeno pepper
In a shaker tin add the following:
Small scoop of ice (crushed is always nice)
1.5oz Treaty Oak Platinum Rum
1oz fresh squeezed lime juice
1oz Organic Agave nectar
3 de-seeded fresh jalapeno rings (1/4 inch sliced) (leave the seeds in for more heat!)
Shake and pour into rita glass of choice (10-12oz glass)
Top with 1oz soda water (I like fever tree, but any will do)
Garnish: Cilantro sprig right on top
